A semi soft surface ripened cow’s milk cheese. Rich, buttery texture with golden -bronze rind washed in barrel fermented Chardonnay. Pleasant, slightly salty tang on the rind with long, earthy notes in the paste. Creamy rich flavours with a mushroom accent and a long finish. Paste oozes when ripe, firm when young with less earthy flavours and restrained lactic characteristics. This pungent “ cheese lover, cheese” pairs well with a Chardonnay.
