A circular surface ripened Crottin style cheese with white bloomy rind. Overall pleasant lactic notes with a flavor profile that evolves as the cheese ages. The paste begins as light and chalky and slowly becomes soft, almost liquidy, aromatic and complex with age. Over time blue mold begins to appear on the surface which continues to add to the intensity of flavour this cheese obtains over time. Perfect to pair with white whites, particularly a lightly oaked Prince Edward County Chardonnay.
