Nettles Gone Wild
A soft surface ripened cheese made with goat’s milk, organic rennet and wild nettle leaves. Earthy herbal full flavors, almost garlic like intensity, with restrained minerality, concentrated texture and a rich complex finish. Ripens to a soft, oozy texture. Excellent with medium bodied wines such as Prince Edward County Cabernet Franc when mature and Chardonnay or Riesling when young.
Not only does this cheese have the best name, but the texture and flavour is fantastic. A must try!
