Soft – Ripening washed rind cheese made from 100% local Water Buffalo’s Milk

Rich, creamy, chewy and firm texture with gold-bronze/ orange rind that is washed in local PEC fermented Chardonnay. Pungent smell with primary tastes of salt, sour and slightly sweet this buttery cheese has a hint of earthy, barnyard flavours with a mushroom accent and a long finish. Paste oozes when ripe and is firm when young. This Silver Medal Award Winner at the 2017 International Awards in Nantwich, England, matches with rich, oaky Chardonnays, Burgundian whites, Champagne and silky Pinot Noirs.
