Closer to cheddar in texture this cow’s milk cheese is mild and pleasant when young but as it ages it develops nuttier and sharper, saltier flavours.  Single sourced from a historic PEC dairy farm, Jean, it’s 75 year old owner,  is still milking her cows daily. Great with lighter reds (Gamay) or barrel fermented Chardonnay.
