Silver medal winner at the 2017 International Cheese Awards in Nantwich, England. Firm, aged cheese with a pleasant chewy washed rind and a crumbly, grainy texture. Slightly salty, with complex aggressive flavours. Creamy on the palate with a rich flavourful finish. Aroma of sweet hay, honey and light barnyard, this signature cheese is excellent with fruity complex reds such as bolder Pinot Noir and medium bodied Cabernet Franc and Merlot.
